(Singapore, September 2026) Singapore’s historic CHIJMES welcomes a bold new culinary chapter with the arrival of Sabòr, a Spanish restaurant dedicated to authentic tapas, soulful paellas, and the vibrant spirit of communal dining. 

Transforming the heritage complex into a lively courtyard experience that channels the rustic charm of Spain’s dining culture, Sabòr is backed by the team behind Duomo Ristorante, the popular Italian restaurant at CHIJMES.

Designed for convivial gatherings, the 100-seater concept offers a glass-enclosed dining room or the open courtyard terrace, both crafted to flow seamlessly from relaxed evenings into energetic dinners.

The menu, curated by Valencian-born Chef Javier Vicente Rejas — co-founder of the London Paella School and a familiar name in Singapore’s Spanish dining scene  — celebrates heritage flavours with bold execution.

Menu Highlights includes Croquetas Spicy Crab, Bikini Sobrasada with Honey and Cheese, Angus Beef Steak with Piquillo Peppers, and Grilled Barramundi with Moho Picón finished over binchotan. 

The specialty here is the Paellas. Choose from traditional like Paella De Marisco Seafood, Paella Squid Ink, Seafood & Tiger Prawn Fideua to hearty Wagyu A5 MB5 beef or  variations like Pork & Scallops with Truffle and Vegetarian Mushroom & Truffle.

More Than Dining

Sabòr integrates curated music programming to mirror Spain’s lively social culture. A dedicated happy hour runs daily from 4:30–6:30 pm, making it a solid excuse to make CHIJMES a first stop after work at the accessible location. Start with Sangria Blanc or Roja, tapas before moving to mains like Paella then popular desserts - Churros with Chocolate and Basque Cheesecake and Strawberry Ice Cream.
