Flavours of the Lion City at Edge, Pan Pacific Singapore

Floyd and Farah Cowan got a full 60th Anniversary experience when they ventured down to Marina Bay to have an extensive buffet dinner
at the Pan Pacific Singapore

With Singapore’s 60th anniversary approaching on August 9, 2025, Farah and I got the full flavour of the Lion City celebrations Saturday night. With traffic being diverted as the practice for the National Day Parade was being held in the Marina Bay area, we had to walk a few blocks to the Pan Pacific Singapore where we would enjoy an extensive buffet dinner at the Edge

As we walked toward Pan Pacific, we noticed the seven members of the Red Lions parachute team drifting down and around the many high rises surrounding Marina Bay. Disappearing from our view as we crossed the pedestrian overpass to Suntec we are surprised to see the heavy armour of the Singapore army stretching both ways along Nicoll Highway. Crowds lined the usually much quieter walkway. As we settled into our seats in the Edge the Royal Singapore Airforce in their F-15SG fighter jets performed their precision Multi-Axis Flypast roaring overhead – momentarily stopping all conversation.  

Executive Chef Andy Oh and his culinary team, present an equally tantalizing display with their Flavours of the Lion City.  With over 100 items on the menu Chef Oh has created a nostalgic and pride-filled gastronomic journey. Highlights include Salt Baked Crab, Wok-fried Hokkien Prawn Noodle in Opah Leaf, Peppery Bak Kut Teh with Pig Stomach, and a live station featuring Durian Kueh Pie Tee, alongside Edge’s signature and beloved Singapore Laksa. With so many items available everyone is going to find something they particularly enjoy. Long familiar with Singapore laksa as it was one of the first unique dishes I experienced when I arrived 25 years ago, it is one dish I always enjoy. 

Despite being here all that time, I never encountered Sambal Local Farm Sweet Potato Leaf. Don’t let the word ‘sweet’ mislead you as it is a complexly spicey dish. But even for this Westerner with less adventurous tastes the spices didn’t overwhelm me, and the complexity of flavours were a delight. Other popular Asian dishes include chilli crayfish, Penang char kway teow, satay, and nasi goreng.

That is not where I started. I went for lighter snacks, a variety of hard and soft cheese, crackers and grapes, next to the prepared meats, then worked my way up to the heavier, meatier fare. 

No surprise to me, Farah went first to the sushi and sashimi station. While the sashimi was fresh there wasn’t much variety in the sushi section. But all on offer were good quality. 

The Boston lobster was impressive looking and very popular with some people loading their plates with the long tentacles and halved shells that were grilled, baked and broiled. I also took my fare-share of the oysters on ice. 

Seafood on Ice includes the Boston lobster, snow crab, oysters, scallops, mussels and more as dishes are rotated. 

Still focusing on the international cuisine those who are not vegetarians swarmed the Charcoal Grill & Carving Station where they found Angus beef short rib, lamb chops, porchetta and whole barramundi. 

Not only are there typical Singapore dishes but popular Indian dishes. Butter chicken, fish tikka, paneer makhani and naan will satisfy those with an urge for food from the Subcontinent, but with a Singapore touch. 

Peking duck, roast pork belly, and char siew can be found at the Chinese live station.

The choice of desserts is extensive with the chocolate fountain, durian pengat, nyonya kueh, tiramisu, and an ice cream bar with a variety of flavours. Children came away with eyes as big as the bowls of ice cream they carried.

 

There are hot and cold drinks included, but if you want wine, beer or other adult drinks, they would be extra.

Families and groups delighted in the extensive offering of the Edge. And while Flavours of the Lion City is only available for a short time, the buffet at the Edge is constantly serving up delightful surprises and special dishes.

When we finished, we dove into the crowds gathered to watch the fireworks light up the night.
