Savour the Essence of Italy - Thirty9 Redefines Culinary Excellence
At Thirty9 every dish is crafted with passion and precision to delight the senses
(Singapore, 22 February 2024) Walking up Duxton Hill to Thirty9 I was delighted to see the neighbourhood bright and energetic after its pandemic snooze. Restaurants, cafes and bars were bubbling over with people enjoying life after work and after dark.
Since its inception in October 2022, Thirty9 has been celebrated for its commitment to culinary excellence, warm hospitality, and inviting ambiance. Located in the heart of Duxton Hill, guests are transported to the vibrant streets of Italy as soon as they step through the door, where each dish tells a story of tradition, innovation, and passion. Experience the enchanting ambiance of Thirty9 as the night falls, where rustic charm meets modern elegance.
Crafted and owned by the seasoned husband-and-wife team of Peter and Giusi Stilli, who boast a decade of ownership at the adjacent Latteria Mozzarella Bar, Thirty9 epitomises the essence of Italian hospitality, offering a cozy retreat where guests can revel in the warmth of rustic trattoria charm.
Peter and Giusi demonstrated their own brand of personable hospitality as they welcomed us to their ambient restaurant. "Thirty9 represents our vision for a unique culinary experience with Italian flair," says Peter, Owner of Thirty9. "From the meticulous curation of our wine list, featuring vintages from across the globe, to the warm ambiance of our outdoor dining space, every element is designed to transport guests to the heart of Italy."
At the core of Thirty9's culinary philosophy lies a profound dedication to authenticity and quality, with Head Chef Erik Trozza orchestrating a symphony of flavours behind the scenes. With over two decades of culinary leadership experience in Europe and Asia's most prestigious restaurants, including Osteria by Angie in Tapei, Taiwan; Mia Torino in Singapore; and Maison and Antichi Sapori in Turin, Italy, Chef Trozza infuses each dish with flavours that pay homage to Italy’s rich culinary heritage, but with his own original twist to surprise and delight guests.
I was delighted with the Stuzzichino – Pizza Genovese with its fluffy crust. Basil pesto, mozzarella, red prawns, creamy mascarpone, potato and sun dried tomato gave it the distinctive Mediterranean flavour. The Pizza Genovese, stands as a testament to the flavours of the Italian coast. The harmonious blend of ingredients meticulously were crafted to perfection.
For those craving a taste of Italy's famed antipasti, indulge in the Home-cured air-dried beef Bresaola, paired with Asiago cheese, Soncino salad, and wine-infused pear, (do not overlook the little cubes of pear - they add a delightful sweet counterpoint) or savour the Grilled Octopus, featuring tender lemon chickpeas, paprika sauce, and crispy chorizo—a perfect balance of textures and flavours.
For the main course, we explored through our sharing menu, the rich flavours of Italy with dishes such as the Homemade Fusilli alla Napoletana, showcasing a rich pork and beef ragout, fresh basil, and Parmigiano Reggiano.
While it may seem like a lot for the six of us, there was nothing left on the plate when the next course came – such as Chef Trozza’s unique creation, the Whole Red Snapper Casserole, with seasonal seafood and spicy tomato sauce.
Dinner was not yet over as the impressive Grilled Beef Tomahawk was set before us. Garlic confit, Chianti red onion, black pepper mustard sauce with parsley butter.
Do as we did, round off your dining experience with a selection of indulgent desserts, including the Trio Thirty9, a decadent assortment of Millefoglie with lemon custard, Tiramisù, and home-baked Cannoli Siciliani — with flavours sure to satisfy even the most discerning sweet tooth.
If you are unsure of what wine to select to go with your meal, ask Peter what he suggests. He is sure to match your selection with an inspiring wine to partner perfectly with it.
