Unbottle
The Château Clarke 2011 (Listrac-Medoc, Bordeaux, France) gently lays its flavour on your tongue. It isn’t big and bold, but a gentle wine that you wouldn’t refuse a second glass of. The tasting notes say that it is intense and complex, which wasn’t my experience of it, but they came closer saying it has fruit aromas and elegant oaky nuances was well as hints of menthol and liquorice; which I found to be more subtle than the writer of the tasting notes did.
The Chianti Classico Riserva DOCG 2015 (Tuscany, Italy) from Castello di Monsanto another new-to-market brand is exactly what you would expect of a chianti. If you have any experience with wine, you could pick it out in a blind tasting. “Aromas of plums, cherries and hints of green olives. White truffles and deep earth too. Full-bodied, so layered and beautiful with a fabulous texture and ripe tannins.”
For me, I delighted in the Prisoner Red Blend 2017 (California, USA) from The Prisoner Wine Company. This wine has a big personality that is alive with flavours that are truly layered. It is certainly the Hemingway of wines with a great deal to say for itself. The “aromas of Bing cherry, dark chocolate, clove, roasted fig and persistent flavours of ripe raspberry, boysenberry, pomegranate and vanilla” come at you from many directions and awakening different parts of your mouth.
Sea
A Song of Fire, as you would expect, is quite different the A Song of Ice. “It is rich and spicy,” Sean stated, ‘boasting flavours of subtle smoke. It delivers a full-bodied flavour that provides a warm smooth finish that is best enjoyed neat.”
For Johnnie Walker Blue Label Ghost & Rare Glenury Royal (Scotland, UK), this was its Singapore debut and it is exclusive to 1855. It is a much more flavoursome whiskey as Sean explained: “It has sumptuous orchard fruit notes, sweet apple and delicate pear. It is heightened by creamy toffee and butterscotch. You might note waves of vanilla, heather honey, dried fruit and dark chocolate.

1. Johnnie Walker Blue Label Ghost & Rare Glenury Royal (Scotland, UK) | Singapore Debut & 1855 Exclusive
· Has an ABV of 43.8% and is the latest addition to the Johnnie Walker Blue Label Ghost and Rare series carefully crafted by Master Blender Jim Beveridge and his small team of expert whisky makers.
· This edition features 8 handpicked whiskies form the four corners of Scotland, including three irreplaceable “ghost” whiskies and five incredibly rare expressions from the Johnnie Walker Blue Label reserves.
· At the heart of this blend is the legendary Highland “ghost” distillery from Glenury Royal that closed in 1985. Its colourful history is as exceptional as its uniquely rich and fruity whiskies.
· Founded in 1825 by Captain Robert Barclay – a Member of the British Parliament and the first man to walk one thousand miles in one thousand hours - the distillery was destroyed by a devastating fire only to rise like a phoenix from the flames to thrive once again. Under Barclay’s tenacious leadership, it flourished to become one of only three Scottish distilleries to enjoy a royal title. Today the rare spirit of Captain Barclay lives on in the dwindling stocks of this incredible “ghost” whisky.
· In addition to Glenury Royal, other “Ghost” whiskies from Pittyvaich and Cambus distilleries are balanced with exceptional rare single malts from Glen Elgin, Glenlossie, Inchgower and Glenkinchie and a beautiful, rare grain whisky from Cameronbridge.
· Sumptuous orchard fruits, sweet apple and delicate apricot notes from Glenury Royal are beautifully heightened by creamy toffee and butterscotch from Cambus and Cameronbridge. The other rare whiskies from Glen Elgin, Inchgower, Glenlossie, Pittyvaich and Glenkinchie bring waves of vanilla, heather honey and dried fruits that weave through smooth dark chocolate and nutty layers to create a perfectly balanced exploration of this irreplaceable “ghost” whisky.
· Best enjoyed neat, alternating with sips of iced water on the side
· Retail: $528 | WWW: $418
2. The Balvenie The Week Of Peat Aged 14 Years (Scotland, UK) | Singapore Debut
· One of three releases in The Balvenie Stories range – a collection of single malt whiskies representing tales of character, endeavour and craft.
· The 14-year-old single malt whisky was inspired by distillery manager Ian Millar who ordered a batch of Speyside peat for the kiln after a trip to Islay.
· For a week a year, The Balvenie distills a batch of peated malt resulting in expressions that introduce fragrant smoke notes to the classic Balvenie flavour profile.
· Nose of gentle sweet peat smoke, lighter floral notes and delicate butterscotch honey.
· Velvety and round to taste with the peat smoke balancing citrus flavours, oaky vanilla and blossom honey.
